For this recipe, I actually just gave it a try without knowing whether the flavors would work. I knew I'd like the strawberries with the beets and the strawberries with the squash, so I thought I'd try the three together to see what it tasted like. The combination is light and refreshing. If you threw in feta or a little lemon juice or even pepper, I bet it would just enhance the flavor party.
Ingredients:
- one large (or two small) yellow squash, washed and cubed
- 1/2 to 1 pint strawberries, washed and cubed
- 3 roasted or 1/2 to 1 can beets, washed or rinsed and cubed

or any ratio you think works best
Directions:
In a large (cute) bowl, combine the three ingredients and toss. Refrigerate and serve chilled.
