Because these last few have been the coldest weeks so far this year in Richmond, I thought perhaps a fresh, light recipe would be a perfect suggestion.
My mom created this delicious and simple summer recipe when we came to visit this year. Other than the chopping (which is a perfect mindfulness opportunity), it is quick and easy! The crunch make this a perfect, healthy side dish. For even more crunch, sometimes I add red/purple cabbage for a boost of color, fiber, potassium, and vitamins. Ingredients:
1 large granny smith apple, washed
3-4 carrots, scrubbed (peeled or not peeled)
2-3 celery stalks, washed
(Optional: 1/8-1/4 head of purple cabbage, washed)
Feta cheese, crumbled
2-3 T Lemon juice
1 T Olive oil
Salt and pepper
Chop apple, carrots, celery, (cabbage). In a medium bowl, combine and top with lemon juice and olive oil. Add crumbled feta, salt, and pepper and mix. Serve cold.
